It's easy to make, and very versatile, you could put anything in it really. The whole family loved it. The cool thing about this recipe, is that it was a wonderful summer soup, but would also be great in the winter months too. You could sub some cabbage in place of the squash!
I think next time, I might try chicken and rice in the soup, instead of ground beef. I served it with crushed tortilla chips and sour cream.
Here's my version, have fun creating your own!
Squash & Pepper Soup

1 can of diced chilies and tomatoes
3 Fresh Basil Leaves
Garlic Powder, Salt, Pepper
2 16 oz Cans of Tomato Sauce
1 Can of Water
Instructions:
Brown Ground Beef in skillet or pot, with squash, tomato, peppers, green onion, can of chilies and diced tomatoes, basil, garlic, and salt and pepper. Cook at med-low heat, in order for the squash and peppers to cook, and all the flavors to blend.
Drain
Put back into pot; add tomato sauce, plus one can of water (empty tomato sauce can of water) and simmer on low for about an hour.
