Feed Your Family on a Budget:Homemade Pepperoni Loaves


In my kitchen,hangs this super cute 50's retro sign that says: "Moms Diner Open 24 Hours"  hahahahaha  said no mother ever.  What mama wants to be whipping up different meals for different people, how and when they want it....no thanks!  Being that I have more than a few picky eaters, I'm always on the look out for quick and easy eats for my peeps.                                     
When I find something that everyone likes, AND it's freezable and easily reheated in the microwave, I'm all over it like white on rice!

This recipe is super easy.  It involves about fifteen minutes of prep and then around thirty minutes of cook time!  Everyone I've ever fed it to, loves it.   For my family of six, it comes out to about $2 per person and we usually get at least two meals out of it as well!  So not only is it easy and delish, but also great on the grocery budget.  WIN!!!   :)
What you will need to make 5 Pepperoni Loaves:
1 package of frozen Rhodes bread dough (5 loaves in the bag, just thaw what you want to use)
    1-2 packages of pepperonis
    4 cups of mozzarella cheese (or what ever cheese you have on hand)
   Butter
   Garlic salt or powder...spices of your liking :)


How you make it:
About four hours before you plan on making this yumminess, set the loaves out to thaw.  They will slowly rise.

When you're ready to get started, Preheat your oven to 350. Flour the loaves, as well as the counter or surface you will use to flatten them out a bit with your rolling pin.  You don't have to roll them out too much...usually about six to eight rolls will do.

Next, lay the pepperonis out on the bread loaf, followed by the cheese(s), and finish up with a sprinkle of garlic salt and/or the spices of your choosing.  If you wanna add more toppings, go for it!  This is just the simple, super cheap version :)
Once you have the toppings on, roll that baby up.
Heat butter in the microwave until melted.
I usually use 1 stick of butter for five loaves.
Once the butter is melted, add some garlic salt and if you have some sprinkle parmesan cheese on hand, add a little of it too.
stir it up well, and brush/pour it onto the pepperoni loaves.
Bake for 30 to 45 minutes or until the bread is no longer doughy and the loaves are a light golden brown and a bit crispy on top.
As usual, not too pretty, but tastes awesome! :)


Serve with a tossed salad and Viola!
A quick, easy, cheap meal your family is sure to love!   If you have any leftovers, you can put them into Ziploc bags or a freezer safe container and store them in the freezer until you're ready to enjoy them!

Hey...Let's Catch Up

Hey guys.... I know I've been somewhat absent lately, and so, I want to take some time to catch up! Before I get into it all though, I want to say thank you to everyone who reads my blog...
